JD’s Shoyu Co is a small brewer of shoyu, or soy sauce. We follow a traditional brewing process, sometimes with the addition of 100% natural but nontraditional ingredients to present captivating new flavors and aromas.

Only Natural Ingredients

We use only natural ingredients, no funny stuff. Everything in here is real food. Here’s a complete breakdown of what’s in our flagship juniper rye shoyu. If it’s not on this list, it’s not in the bottle.

Juniper Berries

Whole organic juniper berries. They’re great for more than gin, and provide an especially refreshing pine/citrus note.

Soybeans

Organic soybeans from an Iowa family farm. These provide the protein backbone that produces the distinctive and delicious umami flavor that shoyu is known for.

Rye

Organic rye berries, also grown in the Great Plains. This lightens the body and gives a crisp note.

Wheat

Organic hard red winter wheat grown in the Great Plains. Toasted wheat is a traditional ingredient of Japanese style shoyu, and has been long valued for the aroma it brings.

Sea Salt

Natural salt from the Pacific Ocean, harvested from evaporation pools in beautiful Northern California. This controls microbial activity during fermentation and allows for a safe aging process.

Water

Water from a limestone filtered well in the southern Missouri Ozarks.

Koji

The one invisible ingredient, these are aspergillus oryzae spores. They come from a line painstakingly maintained by our supplier in Kyoto, Japan for hundreds of years, and are behind the transformational magic.

Aged in Missouri White Oak Barrels

The ingredients are packed into toasted white oak barrels and carefully monitored and tended over a yearlong process, until the flavors are well developed.
